Aebleskivers-The Pancake Challenge!

As everyone knows I have been super busy for the past few weeks…Hence I couldn’t post this recipe earlier:(. And the worst part is, I also wanted to make raggmunks, but couldn’t find any time:(. SO anyways I am taking this to the Pancake Challenge, over at Natascha’s Palace.

SO coming over to the aebleskivers!These were one of the best pancakes I have ever had. In India, we make these delicacies called panniyarams, and their moulds exactly resemble the aebleskiver mould. Unfortunately I had the bigger ones, so I couldn’t get an exact spherical shape. in the pics the side look charred, idk why! Probably because of the effect.

Traditional aebleskivers have apple stuffing in them, so I followed it. These days we get aebleskivers with chocolate filling and other stuff. The word apparently means apple slices in Danish. You can make these with wheatflour or maida. I used maida, but next time I’m gonna try it with wheat:)

Serve this by sprinkling powdered sugar over it. You can eat this with jam or chocolate sauce.

INGREDIENTS

  1. 1 CUP FLOUR
  2. 4 TO 5 TBSP SUGAR
  3. 3/4TH TSP BAKING POWDER
  4. 1 CUP + 3 TO 4 TSP BUTTERMILK
  5. 1 EGG
  6. 1 1/2 TSP VANILLA ESSENCE
  7. 1/2 AN APPLE CHOPPED
  8. 1/4 TSP CINNAMON POWDER
  9. 1 TBSP+ MORE BUTTER

METHOD:

IN A BOWL BEAT THE EGG WHITE AND SUGAR, UNTIL NICE AND FLUFFY. ADD THE ESSENCE, YOLK AND BUTTER MILK.

ADD THIS MIXTURE TO THE FLOUR AND BAKING POWDER MIXTURE. ADD A LITTLE BUTTERMILK IN CASE YOU ARE NOT GETTING A GOOD CONSISTENCEY. LET IT SET FOR 10 MIN OR MORE.

IN A NON STICK PAN ADD 1 TBSP BUTTER, THE APPLE PIECES, 2 TSP SUGAR AND CINNAMON POWDER. ROAST WELL FOR 3 TO 4 MINUTES.

ADD HALF A TSP OF BUTTER IN EACH COMPARTMENT OF THE PAN. ONCE IT STARTS BUBBLING, ADD BATTER TO 3/4TH OF EACH COMPARTMENT OF THE ABLESKIVER PAN. ADD SOME FILLING IN EACH. ADD MORE BATTER OVER IT.

COOK COVER FOR 4 MINUTES ON SIMMER. THEN INCREASE TO MEDIUM FLAME AND COOK THE OTHER SIDE UNTIL GOLDEN BROWN. CHECK IF IT’S COOKED BY PIERCING A TOOTHPICK INTO IT. IN CASE THE OTHER SIDE ISN’T GETTING COOKED PROPERLY THEN COOK COVERED FOR A MIN OR SO!

  1. Wow.. I simply love aebleskivers. I had these for the first time when I came to Denmark – it is such a christmassy thing here. 🙂 traditionally they stuff it with prunes. I prefer them plain with some powdered sugar and marmalade. 🙂 Kudos to the effort Lina.

  2. they look so good ! They resemble with the donuts made in my country stuffed with different jams or simple with powder sugar, but the recipe is a little different !

  3. I love these little pancakes and have two pans, one is electric and the other for the top of the stove. I just have not made them in awhile but maybe I feel inspired with your post 🙂

  9. These look delicious Lina! I love the special pan and the cute shapes–they really stand out amongst all the pancakes as most of pancakes tend to be flat! The apple filling sounds delicious, as does chocolate. They look a lot like takoyaki!
